A lot of scenes from the Night Watch series have stayed with me pretty vividly-- I have mixed feelings about it because some of those scenes were regrettable or annoying-- and it has a way different tone than a lot of NA/UK urban fantasy like the OP said.
I really liked the part, I think from "Day Watch", where a Light doctor made a deal with a werewolf-- for every pediatric oncology patient he cured with magic, the werewolf would turn another patient, giving them immunity to disease, and this balance allowed their actions to slip under the radar for a while. It's that great Cold War plot of making deals with an enemy agent that one's superiors would never allow.
